Iris, a striking restaurant in the floating Salmon Eye, opens in Norway

The restaurant is run by Anika Madsen, a renowned Danish chef

The new trending restaurant in Norway – Iris – is housed in the floating art installation Salmon Eye, which is located in the middle of the Hardangerfjord. This exclusive dining spot is located at the Salmon Eye, an art installation and visitor centre for the aquaculture industry. A minimum of two people are required to book the tasting experience.

The structure has a double-curved ellipsoidal design, with the silver, spherical dome appearing to float in the water.

Surrounded by mountains and bespoke scenery, Iris has a 18-course tasting menu. If the weather permits, one of the courses will even be served on the rooftop, grilled over an open flame.

As the evening comes to a close, guests can be transported back to Rosendal by boat. To learn more about the seafood industry, the visitors can also combine the restaurant experience with a tour of Salmon Eye.

The Iris restaurant has only 24 seats per evening. It is open four days a week, from Wednesday to Saturday.
