W Goa announces the appointment of Chef Avinash as its new Executive Chef, ushering in a bold new era of culinary creativity, conscious cooking, and Indian heritage reimagined.
With a globe-spanning career and a passion for pushing boundaries, Chef Avinash is already turning up the heat, transforming W Goa’s kitchens into stages for immersive storytelling and radical reinvention.
Global experience meets Goan soul
Having led culinary innovation across renowned international brands like IHG, IHCL, and The Ritz-Carlton, Chef Avinash most recently served as Corporate Executive Chef at Resolute Group in Dubai, and as Culinary Head at Gourmet Investments in Mumbai. His return to Marriott International marks a full-circle moment, reigniting his commitment to crafting unforgettable experiences that fuse local soul with global sophistication.
“In the last decade, Indian cuisine hasn’t just evolved, it’s exploded,” says Chef Avinash. “We’re not cooking food anymore; we’re curating emotion, memory, and identity. A dish can now taste like your grandmother’s kitchen and look like modern art on a plate. That’s the magic we’re creating here at W Goa.”
Rooted in flavor, elevated in form
From raechado-spiced crispy calamari plated with contemporary finesse to plant-forward innovations like tamarind-glazed celeriac and koji-aged vegetables, his menus champion hyperlocal flavors, sustainable sourcing, and cutting-edge techniques, turning every meal into a sensorial journey.
Dining with intention
W Goa’s guests can now expect immersive culinary narratives: ancient grains reinterpreted as modern luxury, line-caught seafood from Goan fishermen, and meals that not only nourish the body but stir the soul. Under Chef Avinash’s leadership, W Goa is embracing a new definition of luxury, one that is rooted, real, and responsible. From root-to-stem practices and regenerative coffee sourcing to a zero-waste mindset, the kitchen is now a playground for purpose-driven innovation.
“Guests today aren’t just hungry, they’re curious. They want to know where the spice came from, who grew their greens, and why that flavor feels like home. At W Goa, we’re turning dining into discovery,” he adds.
