Oberoi Hotels & Resorts announces the much-anticipated opening of Madam Chow at The Oberoi, Gurgaon. Envisioned as one of the most significant culinary launches of the year, Madam Chow brings the rich gastronomic traditions of Guangdong and Sichuan to India’s culinary landscape, expressed through timeless design and the legendary warmth of Oberoi hospitality.
A Striking Architectural Setting
Nestled within a glass pavilion overlooking the hotel’s signature blue reflective pool, Madam Chow seats 86 guests across intimate clusters, elevated platforms, and a dramatic mezzanine level. A private dining room, accommodating 12 guests, offers an exclusive setting for corporate gatherings and celebratory occasions. Designed as a living canvas of contrasts, the space embodies the timeless philosophy of Yin and Yang.
Light and shadow interplay across stone, wood, and glass, while suspended ceramic tiles filter daylight into soft, shifting patterns. By day, the restaurant is bright, airy, and open; by evening, it transforms into a moodier, intimate space of layered textures, glowing shadows, and dramatic accents. Guests are enveloped in a sensory journey where architecture, craft, and cuisine merge in harmony.
Masterful Culinary Philosophy
At the heart of Madam Chow is its culinary philosophy, guided by two master chefs. Chef Wong Kwai Wah (Sam) brings over 35 years of experience specialising in Guangdong and Sichuan cuisines. Revered for his precision and technique, his signature dishes include Imperial Roasted Chicken, Xiang La Tofu, and Zhenglong Whole Silver Pomfret.
His cooking is rooted in authenticity yet elevated for the modern palate. Alongside him, Chef Mark Lin curates an exceptional repertoire of dim sums that balance artistry and tradition. His creations – Lychee Bonsai Bao, Sheng Jian Bao, Harmony Siu Mai, and Ocean Silk Cheong Fun – are a tribute to the craft of dim sum-making, perfected over more than a decade of international experience. Guests can also indulge in inventive desserts such as Jasmine Tea Mai Lai Go, Slow-baked Chinese Red Date Pudding, and Sichuan Peppercorn Ice Cream, which offer an elegant finale.
Signature Beverages and Pairings
The culinary journey is complemented by a thoughtfully crafted beverage programme. Signature cocktails like Madam’s Favourite, Pearl of Fire, and Jade Hue are inspired by Asian ingredients and stories, while an extensive selection of Chinese teas, sakes, and international wines enhance the pairing experience.
An Immersive Dining Experience
Every visit to Madam Chow is designed to be immersive. Guests can sense the energy of the open kitchen, hear the rhythm of woks, breathe in the fragrance of steaming dim sums, and watch the reflection pool shimmer in the evening. Each service detail, delivered with characteristic Oberoi warmth, elevates dining into a memory.
Leadership Perspective
Ankush Mahajan, Vice President & General Manager, The Oberoi, Gurgaon, said: “Madam Chow reflects our commitment to creating distinctive dining experiences that marry authenticity with innovation. We are delighted to welcome guests to a restaurant that is rooted in tradition yet reimagined for today’s discerning diners.”
