This October, Oberoi Hotels & Resorts in Bengaluru and Mumbai welcome multi-award-winning Chef Julien Royer of Odette, Singapore. For four exclusive evenings, he and his team will showcase their signature creations at Wabi Sabi (Bengaluru) and Vetro (Mumbai).
Odette, a three Michelin-starred modern French restaurant, reflects Chef Royer’s respect for seasonality, terroir, and artisanal produce. Born to fourth-generation farmers in France, he trained under Michel Bras and sits on the Board of Les Grandes Tables du Monde.
Odette: Philosophy and Accolades
Named after Royer’s grandmother, Odette embodies a philosophy of thoughtful, hospitable dining.

Highlights of the exclusive Odette menu include:
- Mangrove Crab with horseradish, nashi pear, and Kristal caviar
- Langoustine comme un dumpling with shiso, katsuobushi, vin jaune
- Arctic Toothfish with Yari Ika, basil, and prawn consommé
- Avocado gourmandise with vadouvan, finger lime, and coriander
- Cevenne Onion Millefeuille with nori, beurre noisette, vin jaune
- Kyoto Miso Endive with yuzu, nasturtium, and sake butter
- Grain de Café with mascarpone, pecan praline, and sobacha
Wabi Sabi, The Oberoi Bengaluru: Zen-Inspired Fine Dining
Wabi Sabi, inspired by the Japanese philosophy celebrating imperfection and impermanence, features serene interiors overlooking a waterfall and lily pond. Kintsugi-inspired ceramics and 24-carat gold leaf accents create a sophisticated, tranquil dining environment.

Chef Royer’s exclusive evenings at Wabi Sabi are on 18th and 19th October 2025, from 7:00 pm. The five-course meal will be paired with bespoke curated beverages.
Vetro, The Oberoi Mumbai: Modern Italian Elegance
Vetro, meaning “glass” in Italian, combines contemporary décor with a traditional wine cellar aesthetic. Expansive windows frame city views, while the Enoteca wine library showcases old and new world labels. The restaurant serves classic Italian cuisine with a refined modern touch.
