The meal has been thoughtfully curated by Chef Pankaj Kumar, Chef de Cuisine at Ssaffron. He explains, “This meal is typically eaten before sunset, cooked with ghee, pink salt, fresh coriander, black pepper, and curds. Oil is avoided to maintain the sattvik concept.”

Appetizers and Starters

The meal features a delightful array of starters, beginning with Shakarkand Aur Anar Ki Chaat, a dish of sweet potato fried in ghee, delicately seasoned with black pepper, fresh coriander, and pomegranate.

Another highlight is the Sabudana Vada, crispy golden tapioca pearl patties, a beloved fasting delicacy, and the Kachche Kele Ki Tikki, a griddle-grilled raw plantain patty with a rich, earthy taste.

Light and Nourishing Dishes

For the main course, the meal includes Dahi Aloo, a curry of potatoes simmered in yogurt-based gravy, and Khatta Meetha Kaddu, a sweet and tangy sweet pumpkin dish.

The Makhane Aur Kaju Ki Sabji offers a delightful curry of popped lotus seeds and cashew nuts, while the Dabi Sukhi Arbi is a dry stir-fried version of colocasia with cumin and green chillies. These pair perfectly with Samak Ke Chawal (barnyard millet), Amaranth Thalipeeth (a nutrient-rich pancake made from amaranth flour), and Singhare Ki Puri (crispy deep-fried water chestnut flour bread).

End with Traditional Sweets

To end the meal on a sweet note, enjoy the Samvat Chawal Ki Kheer, a traditional pudding made from barnyard millet, milk, cardamom, and ghee. For a lighter finish, there is Phalo Ka Sangam, a medley of fresh, seasonal fruits.
