Chef Nicolas Madueno, also known as Chef Nick, has been appointed Executive Chef at Taj Jumeirah Lakes Towers in Dubai. In his new role, he will oversee the culinary operations of four unique restaurants, drawing from a rich global career spanning more than 20 years across luxury hotels and resorts in the Caribbean, Middle East, Asia, Africa, Europe, and South America.

Originally from Peru, Chef Nick’s diverse experiences have shaped his culinary identity. In 2024 alone, he consulted across 14 countries, further cementing his reputation as a global culinary leader. His expertise in Nikkei cuisine—a fusion of Peruvian and Japanese influences, adds a distinct flair to his approach.
A track record of excellence and innovation
Prior to joining Taj JLT, Chef Nick held key roles at iconic properties such as Kempinski Muscat, Hyatt Regency Istanbul, Marriott Marquis Doha, Hilton Congo, and Patina Maldives. Known for pushing boundaries, he has redefined sushi presentation, prioritised visual appeal, and crafted Instagram-worthy creations.
