Zilos Jeddah appointed Santanu Brahmachary as its new Executive Sous Chef. With a career spanning 19 years, Santanu Brahmachary has honed his skills across various culinary landscapes, specialising in fine dining, global cuisine, and banquet catering. His most recent role saw him working alongside the esteemed two Michelin-starred Chef Pino Lavarra, where he made significant contributions to elevating the standards of culinary excellence.
Brahmachary’s appointment at Zilos Jeddah marks an exciting new chapter for the chef and the restaurant, as he aims to introduce innovative dining experiences to the city. In his new role, Chef Brahmachary will lead a diverse team of 35 chefs from around the globe, guiding them to create exquisite dishes that embody the essence of Michelin-starred cuisine. His extensive background includes overseeing the operations of five food and beverage outlets on one of the Maldives’ largest islands, where he successfully catered to over 1,000 guests daily and led a team of 132 chefs. This experience has equipped him with the skills necessary to manage large-scale culinary operations while maintaining the highest standards of quality and creativity.
Brahmachary’s illustrious career is marked by his leadership in luxury resorts, pre-opening ventures, and high-end dining establishments across India, the Middle East, and beyond. His expertise spans from fine dining to all-day dining operations, with a focus on modern cuisine trends, sustainability, and innovative menu development.
