Azure Hospitality, which has various brands under its banner, including ‘Sly Granny’, ‘Mamagoto’, ‘Foxtrot’ and ‘Dhaba’ recently launched Jhoom. The idea behind this cloud kitchen is to create a brand that celebrates the traditional and regional cuisines of India but made specifically for home delivery, in menu and packaging.

The dishes are developed in a manner to ensure they are best enjoyed in the comfort of a patron’s home. The menu focuses on dishes that are signatures from their state of origin along with certain dishes that have been previously ignored when it comes to mainstream delivery brands. The objective is to celebrate and discover recipes and techniques that are being forgotten over time.

Signature dishes on the menu include the classic, Papdi Chaat served with Guacamole instead of the usual condiments. For those who love Dilli ki Chaat, there is the Dilli ka Matra Kulcha. Ghee Roast Chicken Tacos is a blend of two exquisite cuisines, Indian and Mexican.

For the main course the Deconstructed Daal Moradabadi brings forth one of India’s finest lentil preparations in a fun and new avatar. It’s a classic example of the influence of Rajasthani cuisine in Mughal kitchens, thanks to Rani Jodha bai who was emperor Akbar’s wife. Jhoom version is with tadka moong dal, moong dal soup, ghee jeera rice and various toppings.

For meat lovers, there is Jhoom Mutton Raan, Goan Chicken Cafreal, which is light yet full of deep flavours and the more robust Goan fish Curry. Another signature is the Tandoori bacon wrapped jumbo prawns, Jhoom’s desi version of the ‘Surf and Turf’, where the prawn’s sweetness is complimented by the bacon’s saltiness, with the smokiness of tandoor cooking. Vegetarians can choose from dishes like Soya Haleem, Sindhi Kadhi and Veg Galouti.

At the heart of Jhoom is Chef Tej Wardhan Saini, who has been a part of Azure Hospitality since 2018. He has led operations at the Foxtrot, Khan Market outlet. The idea of Jhoom was born seeing the phenomenal response towards modern Indian food there. He came up with the idea of putting nostalgia on a platter for cosmopolitan Indian audiences and introducing the flavoursome Indian food to global palates.
