Bengaluru Marriott Hotel Whitefield brought the vibrant spirit of Holi to life on Sunday, 01 March 2026, with a specially curated Boondi Mixing Brunch, designed to celebrate the festival through flavour, tradition, and shared experience.
A Playful Take on a Traditional Sweet
The afternoon centred around an interactive boondi mixing ritual organised by Executive Chef Gaurav Paul and the culinary team. Guests participated in creating traditional laddoos by combining freshly prepared pearl-sized boondi with ghee, cardamom, saffron strands, and roasted nuts. In a playful festive twist, colourful sugar syrup was added using pichkaris before the mixture was shaped into laddoos. The hands-on activity transformed a classic sweet into a collective experience, engaging both local and international guests.
“Our aim with this boondi mixing ceremony was to add a touch of playfulness to our tradition of Holi, where we wanted our guests to experience the fun of the festivities in a hands-on approach. The use of the pichkaris to mix in the sugar syrup was a beautiful touch that was appreciated by our guests, and strengthened the festive spirit of Holi,” said Executive Chef Gaurav Paul.
A Festive Buffet with Creative Desserts
Beyond the interactive ritual, the celebration continued with a lavish festive buffet featuring an array of seasonal favourites. The experience was complemented by an extended dessert counter showcasing handcrafted sweets and inventive confections such as Gulab Jamun Tiramisu, Thandai Cheesecake, and Gujiya Hand Pie, blending traditional flavours with contemporary creativity.
