Robert Dallimore is a global hospitality leader and the current General Manager of Grand Hyatt Mumbai Hotel & Residences, as well as the Area Vice President (AVP) for Hyatt West India. In these dual roles, he is responsible for the strategic direction, operations, and continued legacy of one of India’s most iconic hospitality destinations, while also providing leadership across Hyatt’s West India portfolio.
With a distinguished career spanning over 25 years at Hyatt, 24 of which have been with the Grand Hyatt brand, Dallimore brings unmatched expertise in luxury hospitality, operations management, and property transformation.
Throughout his international assignments, Dallimore has led complex hotel operations, overseen major renovations, and spearheaded successful pre-openings.
At Grand Hyatt Mumbai, he is driving the next chapter of the hotel’s journey, overseeing ongoing elevation, upgradation and reinvigorating the property’s offerings to set new benchmarks in luxury hospitality.

Grand Hyatt Mumbai has been a landmark property in India’s luxury hospitality scene. What inspired this new chapter of transformation for the hotel?
With over two decades of dedicated customer loyalty, Grand Hyatt Mumbai has undertaken a thoughtful transformation aimed at enhancing the guest experience across several key areas. Central to this evolution are the refreshed rooms and residences, offering guests a sophisticated environment. The Grand Club has been meticulously reimagined to serve as an exclusive retreat for discerning guests seeking a tranquil and elegant space to work, hold meetings, or simply unwind. In addition to the serene ambience, our guests at the Grand Club Lounge can anticipate an exceptional array of culinary delights and bespoke cocktails, ensuring a memorable and refined experience. This holistic approach to elevation underscores the hotel’s commitment to blending comfort, style, and exclusivity for its valued guests – a destination where every moment is grand, personal, and truly unforgettable.
From your perspective as both General Manager and Area Vice President, how do you define success for a luxury property in a market like Mumbai today?
Mumbai’s hospitality sector is set to experience robust growth in the coming years, fueled by increasing demand for experiential travel and a heightened focus on culinary innovation. At Grand Hyatt Mumbai, we remain dedicated to delivering personalised care and consistently upholding our reputation for culinary excellence. Our celebrated signature restaurants, led by skilled expatriate chefs specialising in authentic Italian and Chinese cuisines, ensure that every dish honours its cultural roots.

The relaunch of Celini and Juniper has generated a lot of buzz. What makes these concepts unique in today’s competitive F&B landscape?
Embracing the Italian philosophy of La Dolce Vita, Celini continues to be a culinary destination that is steeped in tradition and spans across generations. Each dish reflects Italy’s rich culinary heritage infused with stories, history, and classic family recipes. An experience that brings friends and families together for every milestone and celebration. Celini is reimagined to be a culinary haven at Grand Hyatt Mumbai that is #HomeToItaly.
A significant element of the relaunch was also the enhancement of the guest experience. This was achieved through the introduction of tableside service, which added a theatrical and interactive dimension to the dining experience. This service style was designed to increase engagement between the chefs and the guests, making the dining experience more memorable and personalised.
On the other hand, Juniper which was formerly known as ‘The Bar’ got a bold new identity, a destination for wine and spirit connoisseurs. With a warm and cozy ambience, Juniper offers a fine collection of wines and spirits each chosen for their quality and unique story. A chic space for socialising and pre-dinner cocktails, Juniper makes for a perfect prelude to dining at Celini, China House, or Soma. The focus is also to offer curated beverage experiences through partnerships with leading global bars and drawing upon the expertise of international Hyatt hotels.
Tell us about The Grand Showroom – it sounds like a bold and theatrical concept. What kind of events is it designed to host?
The launch of the Grand Showroom marked a significant milestone for Grand Hyatt Mumbai’s 20-year legacy in the country. The vision was to revolutionise the luxury event landscape in India by providing a captivating, event-ready venue offering immersive experiences. A space inspired by the grandeur of Broadway/ Bollywood theatres while embodying the timeless elegance of the Grand Hyatt Mumbai.

You’ve had an extraordinary journey with Hyatt across Asia. What are some key learnings you’ve brought with you to Mumbai?
Drawing on my 25 years of experience with Hyatt, I am committed to striking a meaningful balance between Hyatt’s global brand values and the rich cultural nuances of the Indian market. This balance is achieved through a deep-rooted sense of cultural sensitivity and a relentless focus on delivering personalised, authentic guest experiences that align with local expectations—while remaining true to Hyatt’s world-class standards.
What leadership principles guide your approach to both operations and team building across Hyatt West India?
