WALNUT THANDAI โ CHEF NEHA DEEPAK SHAH
Ingredients:
- ยฝ cup California walnuts (soaked for 30 mins โ 1 hour)
- 5-6 black peppercorns
- ยฝ tsp fennel seeds
- 4-5 green cardamom
- ยฝ tsp saffron strands (soaked & muddled)
- ยฝ tbsp poppy seeds
- 2 tbsp melon seeds
- 1 tbsp dried rose petals
- ยฝ litre milk
- ยผ cup sugar
Garnish: Chopped walnuts, pumpkin seeds, rose petals
Preparation:
- Soak walnuts, melon seeds, and poppy seeds separately.
- Muddle saffron with water to make a paste.
- Blend together all soaked ingredients, fennel, cardamom, black pepper, rose petals, sugar, saffron paste, and a little milk.
- Once smooth, add remaining milk and blend well.
- Serve chilled with ice, garnished with walnuts, rose petals, and pumpkin seeds.
CALIFORNIA WALNUT HALWA โ BY CHEF NEHAL KARKERA
Ingredients:
- 200g California walnuts
- ยผ cup ghee
- 1 tbsp milk powder
- ยฝ cup khoya
- 1ยฝ cup milk
- ยฝ cup sugar
- ยฝ tsp cardamom powder
Preparation:
- Grind walnuts into a semi-coarse powder.
- Heat ghee in a pan on low heat, add walnuts, and cook for 10-12 mins until golden and fragrant.
- Add milk powder and khoya, mixing thoroughly.
- Pour in milk, cook on medium heat, and let it reduce to half.
- Add sugar and stir continuously until thickened and ghee separates.
- Remove from heat, sprinkle cardamom, and garnish with chopped walnuts and edible gold leaves.
PANEER WALNUT MALAI KOFTA โ BY CHEF GUNTAS SETHI
Kofta Ingredients:
- 2 potatoes, boiled & mashed
- 1ยฝ cup paneer, grated
- 3 tbsp California walnuts, chopped
- 1 tbsp coriander, chopped
- 1 ginger, grated
- 2 green chillies, chopped
- 2 tbsp raisins, chopped
- 1 tsp red chilli powder
- 1 tsp jeera powder
- Salt to taste
Curry Ingredients:
- 1 tbsp butter
- 1 tbsp oil
- 2 bay leaves
- 1 tsp jeera
- 1 cinnamon stick
- 1 onion
- 3 tomatoes
- 2 garlic cloves
- 2 green chillies
- 2 ginger pieces
- 2 tsp red chilli powder
- 1 tsp garam masala
- 2 tsp kasuri methi
- 2 tbsp yogurt
- Coriander leaves for garnish
- Water as required
Preparation:
Kofta:
- Coarsely chop walnuts and raisins.
- Mix with boiled potatoes and paneer, shape into balls.
- Air-fry, deep-fry, or shallow-fry the koftas.
Curry:
- Soak walnuts in water.
- Blend all ingredients with soaked walnuts.
- Heat oil, add garam masala, kasuri methi, red chilli powder, and puree.
- Add sugar, salt, and cook until oil separates.
- For a smoky flavor, place a hot coal in a small bowl inside the dish, drizzle ghee on it, and cover for a few minutes.
