New on the fine-dining menu in 2024
2024 will continue to be the year of innovation in food and beverage. In India, we will see our hotels, restaurateurs and chefs innovate with regional cuisines and local ingredients.

Below are a few trends to look for in 2024:
Plant-based + plant protein menus: With growing focus on sustainability, we will turn inwards and focus on healthy eating with meat alternatives and plant-based menus.

Micro regional cuisines/ recipes: There is an urge to educate our guests about the micro regional cuisines and the surreptitious cooking methods. Telangana, Coorgi, Saoji, Northeastern cuisines are gaining popularity and this trend will continue to see many chefs champion this cause.

Foraging for local ingredients: All hyperlocal and maximally tasty ingredients are used in our recipes. Our chefs have started to discover the abundance of ingredients available across our country and this trend will define the menus at a few of our restaurants.
Trends in beverages
The concept of neighborhood drinks is on the rise, where our bars use fresh local ingredients to showcase the local drinking culture. Another trend in vogue is zero alcohol bars.
