Iconic rooftop lounge refreshes its culinary and cocktail experience with global flavours and sunset-led mixology.

DOME at InterContinental Marine Drive has always occupied a rarefied space in the city’s dining and nightlife landscape. With the unveiling of its all-new culinary and cocktail menu from 1 December 2025, the iconic rooftop lounge enters a renewed chapter—one that feels both familiar and quietly transformative.

As the sun begins its descent into the Arabian Sea, the experience at Dome takes on an almost cinematic quality. The all-white rooftop lounge, bathed in golden-hour light and softened by the evening sea breeze, feels suspended between sky and sea. Marine Drive’s lights shimmer into view, and the transition from day to night becomes an integral part of the dining narrative. It is this seamless interplay between setting and sensorial detail that continues to define Dome’s enduring allure.

Sunset Sour

A Small Plates Menu Designed for Discovery

The refreshed menu stays true to Dome’s long-standing small plates format, encouraging exploration, sharing, and leisurely indulgence. Crafted by Executive Chef Lalit Rai, the offerings reflect a philosophy rooted in thoughtful sourcing, seasonal awareness, and the elevation of local ingredients through global culinary techniques.

Two signature creations set the tone for the menu’s direction. The Konkani Crab Bao, inspired by India’s western coastline, balances coastal warmth with modern finesse, while the Shiso and Betel Leaf ‘Wadi’ reinterprets an indigenous favourite with refined restraint. These dishes signal a menu that draws from Mumbai’s culinary soul while remaining globally fluent.

Playful nods to local favourites emerge in dishes such as the Pull Apart Pav, a subtle tribute to the city’s beloved vada pav, while indulgence is delivered through the Truffle Kataifi Fries, prized for their delicate crunch and layered richness. The Mock Duck Siu Mai, with its velvety mushroom filling, adds depth and comfort, while the Matcha Salmon Maki and NZ Lamb Chop Schnitzel showcase Dome’s confidence in balancing bold technique with approachability.

The menu is anchored by 48-hour proved sourdough pizzas, their blistered crusts and airy interiors reflecting patience and precision—simple in form, yet quietly complex in flavour.

Cocktails that Mirror the Mood

Dome’s cocktail programme remains a central pillar of the experience, evolving in step with the culinary refresh. Fruit-forward cocktails bring a sense of brightness and ease, well suited to sunset hours. Standouts include Dome Alaska, with its island-inspired notes, and Simaur Pride, offering a citrus-led, velvety balance. Modern interpretations such as the clarified Melon Cream Soda and Tokyo Banana add a playful, contemporary edge.

The menu’s more inventive turn comes through cocktails inspired by the idea of “drinking your own salad.” Garden-fresh ingredients are reimagined in liquid form, resulting in multisensory compositions that feel fresh yet unexpected. Beet and Feta delivers earthy tang with finesse, while Caprese translates a classic salad into a smoky, herb-forward sip.

Hamachi Tiradito

For those inclined towards depth and intensity, potent cocktails such as the Wildberry and Cacao Lowball and the Shiso Highball provide complexity without overwhelming the palate. As the evening deepens, nightcap cocktails take centre stage—the Ume Manhattan offering a fruit-accented take on the classic, while the Sunset Sour mirrors the gentle warmth of dusk itself.
