Maharaja Sawai Padmanabh Singh and restaurateur Abhishek Honawar partner to create Jaipur’s newest fine-dining hub

A unique dining experience celebrating Rajasthan’s rich flavors and culture in a stunning palace setting.

The concept of The Sarvato is built on a foundation of personal narratives of the founders, inspired by their personal experiences. Their commitment is to showcase the nuances of Indian culture and its inherent spirit of hospitality, served with panache.

The Meaning Behind The Name

The name Sarvato refers to the building’s square form, which was used as a hall for a private audience. The Sarvato is one of the most iconic and historically significant spaces within the City Palace, Jaipur. Historically, it has been used as the site of festive rituals, ceremonies, and celebrations. With this venture, it adopts an additional purpose — to provide guests with an unforgettable gastronomic journey.

A Living Museum of Rajasthan’s Culinary Heritage

The Sarvato is an experiential tasting menu restaurant and cocktail bar. A living museum of Rajasthan’s heritage, where the region’s culinary folklore comes to life, it pays homage to the cuisine of Rajasthan. From the heritage of the Royal Family of Jaipur to the dishes that have nourished the region’s many communities, the restaurant takes inspiration from a multitude of sources.

The Gallery Café: A Unique Perspective

The Gallery Café, uniquely situated on top of the center square building in the Palace compound, offers a 360-degree palace view that can be enjoyed in the daytime with coffee and tea (chai), served with traditional chaats, delicious snacks, and desserts.

A Visionary Approach to Tradition and Innovation

“Our vision for The Sarvato is to create a space where tradition meets innovation,” says His Highness Maharaja Sawai Padmanabh Singh of Jaipur. “We want every guest to feel the essence of Rajasthan and take a piece of it home with them. The concept embraces the diverse narratives that exist within Rajasthan, showcasing the best of ingredients and flavors.”

A Curated Tasting Menu for a Nostalgic Experience

The restaurant features a carefully curated tasting menu consisting of six courses. Each course is designed to evoke nostalgia, spark conversation, and create a memorable dining experience. Guests will also enjoy expertly paired cocktails and wines while dining under the stars to the sparkle of candlelight and moonshine, overlooking the spectacularly lit Palace views.

A Commitment to Sustainability

The Sarvato is dedicated to sustainability, sourcing ingredients locally and using eco-friendly practices in its kitchen. Its menu reflects seasonal availability, ensuring that guests enjoy the freshest flavors while supporting local farmers and artisans.

Bringing Cultural Heritage to Life

Restaurateur Abhishek Honawar reflects, “Each space and experience at The Sarvato is designed to tell a story, allowing guests to engage with the cultural heritage of India on a deeper level. With each course, we invite our guests to embark on a culinary journey that spans regions and seasons to bring to life the unique backgrounds and stories of its people.”

A Journey from India to the World

Abhishek’s journey from India to New York highlights the importance of identity and cultural pride in shaping the hospitality experience. The realization of the need for an authentic representation of India emerged after years of working abroad, culminating in a desire to bring a unique Indian perspective to the global hospitality scene. With The Sarvato, he seeks to present India and Rajasthan through his lens, prioritizing authentic cultural representation over stereotypes.

How The Sarvato Came About

For His Highness Maharaja Sawai Padmanabh Singh of Jaipur, the idea for The Sarvato stemmed from his lifelong connection to the Chandra Mahal building at the City Palace. Growing up, he would admire this beautiful space from the terrace of his residence in the Palace, wondering why it hadn’t been used to its full potential. It offers one of the most stunning views in Jaipur, showcasing not only the Chandra Mahal building but also much of the Palace complex.

The terrace’s centerpiece, in particular, the Chhatri, always captivated him. Now, it forms a significant part of The Sarvato’s identity, even featuring in its logo.

The restaurant concept for The Sarvato originated from a desire to offer unmatched luxury experiences at the Palace. While dining options existed, he recognized a gap in delivering an extraordinary culinary and service experience unique to Rajasthan. The Sarvato is their way of addressing this, distilling Jaipur’s essence through its menu, architecture, and ambiance. Their goal is to create something unparalleled—a space where tradition meets innovation and where every detail, from the view to the flavors, reflects the vibrant spirit of the Palace and the city.

A Partnership Rooted in a Shared Vision

For His Highness Maharaja Sawai Padmanabh Singh of Jaipur, who has been committed to platforming the arts and culture that make Jaipur unique, partnering with Abhishek Honawar was an obvious choice. The menu, a seamless blend of local, traditional flavors and innovative techniques, is a testament to their shared vision of creating a space that is a standout dining destination.
