In this role, Chef Jerson Fernandes will steer the culinary direction of his segment, developing and implementing innovative strategies, thereby establishing standardisation across Sodexo’s onsite and offsite kitchens. As the custodian of the retail food brands, he shall lead all thematic and topical food events across client sites and will be responsible for a differentiated approach towards culinary transformation in the office food category.
Chef Jerson Fernandes, a Guinness world record holder, served as the Culinary Director of Novotel Mumbai, showcasing an unwavering passion for culinary excellence and innovation. His diverse experiences range from P&O cruise liner to Taj Group of Hotels, Marriott-RITZ Carlton, and Accor.
An IHM-Hyderabad alumnus, his accolades include the most coveted awards of the country in the gastronomic world, like Hotelier India’s Executive Chef of the Year, BW Hotelier’s Executive Chef of the Year, and Accor South Asia Awards’ Best Executive Chef of the Year, among many others. Recognised by Food Connoisseurs and FBAI, he has also received Best Executive Chef awards from the Asia Food Congress and was awarded the Most Creative Chef of India in 2019 and 2020 by the FHRAI. He was also felicitated by the Chief Minister of Goa and the mayor of Mumbai for promoting sustainable cooking and best practices to prevent food waste. Chef Jerson is influential on social media, earning the title of India’s Most Influential Chef in 2022 from the Times Group.
An ardent Bandra boy, he loves travelling and visiting unexplored destinations. An ambassador of zero-food waste and a promoter of sustainable cooking, Chef Jerson aims to make this world a zero-food waste world. Chef Jerson will be working in close alignment with Rakesh Agarwal, the Segment Director for Office Food at Sodexo India.
