JW Marriott Hotel Bengaluru, has appointed Ankur Rawat as the new Specialty Sushi Chef at UNO, the hotel’s Japanese Restaurant & Lounge.

In his new role, Rawat is taking care of culinary operations at UNO, as well as guiding his team of enthusiastic chefs. His flourishing career of over 8 years has seen him work with renowned MasterChefs of the Japanese Cuisine continues to have great influence on him.

Rawat is a young and vibrant individual with an unmatchable craft in Japanese Cuisine, and brings with him a vast knowledge of the Indian palate.

Chef Rawat is known to adopt innovative and unique approaches in the kitchen, which is among his most defining characteristics. He brings simple yet sophisticated, authentic Japanese food to the table for not just the discerning set of connoisseurs, but also to satiate palates of all levels of experience.

He has had an incredible journey so far that has seen him curate some of the best Japanese fairs under the guidance of established names in the culinary world. His passion for food and perseverance towards creating timeless experiences has allowed him to master the phenomenon of being a Chef of Japanese cuisine, yet in possession of an Indian heart and edge.

Rawat’s first pit stop was at Park In Radisson in Gurgaon, where he was working as Industrial Trainee for a period of 2 years in 2013 and then got promoted to Commi 2 & 3 for Japanese cuisine in the year 2015-2016. He later moved to The Leela Ambience Gurgaon in November 2016 where he held various challenging roles over a period of 2 years that saw him as Commi 1 for Japanese Cuisine under Master Chef Vladimir Villarba for their all day dining restaurant, Spectra that shaped his career with commendable exposure and experience.

Chef Rawat later moved on to The Lodhi Hotel & Residences in the year 2018 as Demi Chef De Partie (Sushi & Teppanyaki) at Elan – all day dining restaurant at the hotel and worked under three of the best MasterChefs of Japanese cuisine. In the year February 2020, he joined The Westin Gurgaon as Chef De Partie (Sushi Chef) where he worked under MasterChef, Chef Venecio Cadavida at EEST – the Pan-Asian Fine Dining.

Chef Rawat hails from Saharanpur, Uttar Pradesh. Among his most prized memories is his work experience with MasterChefs such as Chef Venecio Cadavida, Chef Mikhailtskhai, Chef Noboru Kevin Ozeki, among other established names. When not at work, chef Ankur likes exercising at the gym, playing cricket and travelling.
