Chef Kunal Kapur launches food camp for culinary students

Chef Kunal Kapur curated a culinary workshop titled ‘Kunal Kapur’s Food camp’ in association with the International Institute of Hotel Management (IIHM) for culinary students. Held from 12 January, 2017, the first food camp was held at IIHM Pune where Chef Kapoor showed the participating students various aspects of cooking with special emphasis on the basics of molecular gastronomy like spherification, foams, emulsions, gels, caviar, etc. He also demonstrated different techniques of food plating that is in sync with the contemporary dining. High on his agenda for these workshops was reinventing local food and giving it an international twist.

Talking about the event, Chef Kapur said, “It is always a great feeling to get back to college and I enjoyed the energy and enthusiasm of IIHM’s students. My endeavor with this food camp was to share the knowledge that I gathered over the years given my extensive travel with the students.” The food camp was organized at five key IIHM centres – Kolkata, Delhi, Bangalore, Pune and Hyderabad. In the second phase of the program, other cities like Ahmedabad, Jaipur, Goa and Guwahati could be added to the trip.

Speaking about the association, Dr Subourno Bose, chairman and chief mentor at IIHM and Indismart Group said, “Chef Kapur’s decision to do this food camp with IIHM will pave the way for many fascinating culinary events like this in future. We are changing the rules of the hospitality education with help of industry champs like him.”
