Consumers are now looking for low-fat, sugar-free desserts, fresh juices, and salads. The trend towards plant-based food options is also on the rise, with a growing interest in vegetarian and vegan options. The emphasis on locally sourced and sustainable plant-based foods is also gaining momentum. 

2. Personalization will be key

Consumers are looking for food and beverage options that cater to their unique needs and preferences. Personalization through data collection and technology will become even more important in 2023. Customizable meal kits, personalized nutrition plans, and AI-powered recommendations are expected to gain popularity.

3. Focusing on traditional ingredients

There is a renewed focus on traditional Indian ingredients, especially those that have medicinal properties like turmeric, ginger, and amla. These ingredients are being used in new and innovative ways, from introducing cocktails and mocktails to incorporating them into healthy snacks. While local and seasonal ingredients are gaining popularity, consumers are also increasingly interested in exploring global flavors. With an increasing interest in global flavors and cultural cuisine, fusion cuisine is also expected to become very popular in 2023.  

4. Beverages offer more than just hydration

The beverage industry in India is also seeing some exciting trends in 2023, with a growing preference for specialty coffee shops and cafes that serve high-quality beverages. There is a preference for plant-based milk substitutes like almond, soya, oat, and pea, especially among young people and fitness enthusiasts. Beverages with added functional ingredients such as adaptogens, probiotics, and collagen are expected to become more popular in 2023. In addition, there is a growing interest in cocktails made by expert mixologists using high-quality ingredients. These cocktails are known for their unique and creative tastes and are becoming popular among young adults. 

5. Use of technology

With the rise of social media, many restaurants and cafes are now using Instagram and Facebook to promote their products and attract customers. Many establishments are also using technology to improve the ordering process, with some restaurants now using digital menus and ordering systems.
