Imtiaz Ali Siddiqui has never been one to follow the usual script. For over a decade, he’s been introducing Hyderabad to firsts — from Telangana’s first Lebanese QSR (Seasons XPRS), to India’s first authentic baklava manufacturer (Gourmet Baklava), to the country’s first Levantine fine-dining restaurant (Levant). With Nomme, his 12th and boldest idea yet, he’s building more than a restaurant. He’s building a stage where food, coffee, and culture come together.
Coffee, reimagined as theatre
Walk into Nomme, and you’ll see it immediately. Transparent pneumatic pipes snake across the ceiling, carrying fresh coffee beans that fly, whoosh, and tumble their way into the roaster — before being brewed in front of your eyes. This isn’t just coffee; it’s performance. It’s a spectacle. It’s a ritual that makes you pause, watch and smile.
“Coffee is part of our everyday lives,” Imtiaz says. “But we wanted to take something familiar and make it unforgettable. The Coffee Theatre is playful, dramatic, and it makes people connect — not just with the drink, but with each other.”
A Mediterranean culinary journey
Of course, Nomme is just as much about food as it is about coffee. At its heart, it’s a Mediterranean story told through global voices. Two chefs — each bringing their own heritage and artistry — form the backbone of the kitchen:
- Chef Fatih (Cyprus): Master of Mediterranean desserts and pastry finesse.
- Chef Hisham (Lebanon): Carries the flavours of Levantine tradition.
They’ve crafted a menu of mezze, wood-fired grills, and Mediterranean pastries. Mezze spreads arrive with warm bread, grills showcase lamb and octopus, while braised lamb, roasted fish, and desserts like baklava and citrus tarts highlight Chef Fatih’s artistry. Coffee — from precise espressos to cold brews — completes the experience.
