Chef Sheriyar Dotivala has recently taken over the helm as the Executive Chef at The Resort, Madh-Marve. Chef Dotivala began his culinary journey with Shamiana, the all-day dining coffee shop at The Taj Mahal Hotel. He later moved to Holiday Inn Mumbai as a sous chef where he was overall in charge of the main kitchen and was responsible for inventory and food cost, launching new menus, conducting regular demonstration classes for staff and creating innovative menu for special occasions among other things. During this time, he also successfully completed the ISO-22000 Certification and Craft Training Certificate (CTC).
His next assignment was at ibis Mumbai Airport as Executive Sous Chef where he handled Client Servicing, Quality Assurance/ Compliance and Man Management. He then moved to ibis Navi Mumbai taking over as Executive Chef. At this property, Chef Dotivala was in charge of diverse responsibilities including managing the overall profitability of operations with strategic utilization and deployment of available resources.
Chef Dotivala has completed a Diploma in Hospitality Management and Catering Operations from Rizvi College of Hotel Management and Catering Technology Mumbai. He also holds a Diploma from the American Hotel and Motel Association.
