Its Executive Chef, Gautam Mehrishi, said that biodiversity and sustainability are critical for hotels in current times as most properties work towards bouncing back and thriving in the future.

A sustainable approach is key in driving Renaissance Mumbai Convention Centre Hotel & Lakeside Chalet – Mumbai, Marriott Executive Apartments’ financial growth. Interestingly, the property’s culinary offerings are inspired by spice, and it also procures from various regional suppliers across Maharashtra, Kerala and other parts of India. This gives its dishes the authentic flavor while supporting local businesses.

The hotel also procures raw and unprocessed honey from beekeepers, which ensures that its pantry is always stocked with the real deal. Select suppliers deliver fresh fish to the hotel; a practice that is also followed for chicken and meat. Chef Mehrishi stated that the hotel works with them to check on the feed provided to the animals, so they are fed only fresh nosh, free of antibiotics.

Sustainability coupled with biodiversity is the bedrock of any F&B business. It is easy to lose track of these assets during uncertain times. However, Marriott International believes that this is exactly when it should be encouraged and promoted.
