Chef Piched Paoleng is new Thai Chef at Four Season Mumbai’s San:Qi

Chef Piched Paoleng is the new Thai Chef at San:Qi, the pan-Asian restaurant at Four Seasons Hotel Mumbai. A Bangkok native, Chef Paoleng began his foray into the culinary industry at the age of 20. Armed with a diploma in hospitality and tourism, he trained with some local Bangkok hotels, before kickstarting his career with the Four Seasons Bangkok. He worked there for a decade, training on various pan-Asian cuisines and methods and eventually became the Thai chef de cuisine. Later, he made his way to the Middle East, bringing his Chinese, Thai and Japanese culinary skills to Four Seasons Amman.

Constantly on the lookout for inspiring ideas to create an enhanced experience, Chef Paoleng makes it a point to visit local markets regularly to source for new produce. “Indians love Thai cuisine; the coconut-based curries are similar to those available in South India; and the mix of spices, sweet and sour ingredients makes Thai food a big hit for everyone,” he stated.

Excited about being back in the Four Seasons fold, Chef Piched wants to introduce diners at San:Qi to his signature home-style Thai cooking, with authentic recipes and flavours. He is also keen on encouraging guests to experiment with regional Thai cuisine, and lesser known flavours and ingredients.
