Novotel Goa Resort & Spa by AccorHotels has launched its 35-seater Vero Cibo restaurant. Located in North Goa, this restaurant and bistro bar serves Mediterranean and European cuisine, specialising in seafood. To lend a Mediterranean vibe, the design elements include cabana seating, bird cages, yellow lighting, white drapes and candle lit chandeliers.
Siddharth Noronha, executive sous chef leads the kitchen that features modern renditions of classic dishes from Italy, France, Turkey and Greece. Guests can choose from the‘Daily Black Board’menu featuring the soup of the day, main course and freshly caught seafood specials or select from the carte du jour that highlights an array of tapas, paellas, steak and frites from France, seafood in Sicilian style frito-misto with Italian lime and freshly cut parsley with salad on the side topped with fisherman sauce. According to the chef, a must-try is the Gambas Aglio served with Thai chilli and herbs from the hotel’s herb garden. Guests can also enjoy an assortment of desserts from the rustic Little Red Cupboard at the outlet.

Ganapathy Mallya, food and beverage director at Novotel Goa Resort & Spa added, “Dishes are sourced from a 30-kilometre radius around the resort and features locally made international cheeses, fresh herbs from our own garden, organic vegetables and greens sourced from Pallavi farms, meat and chicken from sensitive vendors and fish from Peter Saldana’s trawler in Mandovi. Menu items are served family style for serving two to four people in beautiful handmade wooden trays with an array of accompaniments.”
