Tell us about coronavirus’ impact on the purchase department of your hotel? How are you managing the supply within your hotel.

The covid-19 crisis has led to a substantial drop in demand and supply of numerous goods and services. We at DoubleTree Suites by Hilton Bangalore have been mindful of cost reduction without hurting brand value or business opportunities. Our existing contractors and suppliers at the hotel have been supportive in following strict hygiene protocols laid down as per Hilton standards.

What are the various measures/ compliances initiated to save cost?
Before initiating and implementing any new operational practices, we discuss the approach with stakeholders and senior management of the hotel. This not only saves cost but also help us make conscious and smart decision while discovering new methods of conducting the business.

We have also analysed our supplier network than ever before. The new normal has called for building trust, right quality, right pricing, discounting policies through mutual support and discussion with the idea to have a valued relationship with them. We are also supporting local vendors and focusing largely on local sourcing. This will help our hotel recover sustainably and better face future risks.

How has the domain of purchase changed with COVID-19 outbreak? Do the purchase managers have to develop certain skills today?
Before the pandemic struck, we were majorly engaged in sourcing room and F&B resources but the attention has now shifted to procuring hygiene and sanitisation products keeping the budget in mind.

As hospitality industry has been unprecedently hit by the outspread of covid-19, our whole focus as a Purchase Department has shifted to replanning our budgets in a way that procurements are easier to obtain without going heavy on the pockets.

How strong should be a hotel’s local procurement process, given the current situation?
The pandemic has forced us to relook at the expenses and look for opportunities to reduce costs. However, due to the sudden outbreak, many new hygiene products have emerged in the market like disinfectants, PPE kits, masks, and gloves which can cause significant damage to our surroundings. It is important to act prudently and not harm our environment while sourcing these products.

With sanitisation being the major focus these days, purchases need to be made through viable sources and verified vendors so that guests feel confident when they stay with us.
