Art of Dum launches in Mumbai

Sanjay Vazirani’s Foodlink has launched ‘Art of Dum’, a gourmet delivery kitchen brand in Mumbai. The brand will offer authentic flavours in elegant and sustainable packaging to Mumbai’s clientele.

‘Art of Dum’ follows the traditional ‘Dum Pukht’ style of slow cooking, which is rarely found in the cloud kitchen format. Its chefs pay homage to the culinary heritage of the royal kitchens of Awadh, characterized by rich aromas and flavours. The Dum Pukht cooking style lets dishes breathe in their own aromas and juices, infusing flavours from various spices and herbs.

This technique takes hours of preparation, hence challenging the modern-day norm of ready-to-eat food that is prevalent in the delivery kitchen space. ‘Art of Dum’ offers a traditional and healthier alternative with Dum Pukht dishes cooking in sealed clay pots, which keeps the flavours, taste as well as the nutrition of the food intact. Dishes like the signature ‘Dal Makhani’ is slow cooked for close to 24 hours, the ‘Dum Handi ka Gosht’ takes six hours and the ‘Chulhey ka Dum Murgh’ takes two hours to cook.

Completing the at-home luxury dining experience is premium packaging with an emphasis on sustainability. This is seen via the brand’s use of reusable glass jars, clay handis and steel cutlery. The brand also encourages its customers to reuse and recycle their packaging.

Diners can enjoy a wide variety of dishes, including appetisers like Rajma ke Galouti, Dum Pukht Kakori and Handi Nimbu Chicken main courses like Kumbh Dum Dama Dum, Gosht Korma Shahjahani, signature biryanis and pulaos like Zaituni Subz Biryani or Dum Gosht Biryani. Breads like Bharwan Cheese Naan; and Warqi Paratha are also on offer. To end the meal on a sweet note, diners can choose dishes like Litchi Ke Tehri, litchi cooked in reduced milk and nuts; and the classic Kesar Da Phirni.
