Since its inception, the team at Sly Granny has collaborated with select brands that share its values of sustainability, sustenance and satisfaction. This time around, the hipster F&B establishment has associated with Darima Farms, an indigenous artisanal cheesemaker.
Sly Granny will use the cheese in its limited dine-in menu from 4th October to 25th October, 2021. Some notables include Spinach and Gruyere soup, Cheese Souffle made with the Garlic Montasio and served with a ratatouille topped crostini.
A cheese menu can’t be complete without a gourmet French Croque Monsieur sandwich. Sly Granny will do a mini version with hickory smoked ham. In the main course, the menu has Sundried tomato and Zarai ravioli with raisins & pine nuts and basil pesto as well as Champagne and Leeks Risotto made with Himalayan tome and served with a green apple chutney.
In the non-vegetarian selection, the restaurant will have a rich Chermoula Spiced Chicken that uses the Darima farms chili bomb cheese, with a side of baked potatoes and split peas. To experience the entire Darima Farms experience there is also a specially curated cheese platter with an assortment of Himalayan cheeses, celery sticks, grape relish, walnuts, olive tapenade and a side of lavash.
The menu has one last surprise featuring the finest use of splendid cheese. This is the Chevré and chocolate mousse with rosemary sugar brulé and a wild berry compote.
Darima Farms, an artisanal cheese making unit nestled in the Kumaon hills of Uttarakhand, was started by Saurabh Vinayek and Arvind Chawla in November 2016. They maintain strict control over what goes into their cheese, limited to the use of raw milk, vegetarian rennet, Himalayan spring water and fresh organic herbs.
